In Zurich and Zug, a small fish is conquering the hearts of foodies: TINYFISH offers fresh sushi at a low price – at least that’s the promise. FACES was on site and took a close look at the concept.
Listen up: there’s a new fish splashing around in the big Swiss sushi pool. TINYFISH has taken advantage of the pandemic-related current and is already at home in local waters three years after its launch. And indeed, the small fish is showing the big fish how sushi should be done these days: sustainable, stylish and appealing. The concept: delicious take-away sushi rolls at a low price. Sounds good, but is it true? And what does the practical test say? FACES took a look for itself and visited the little fish in one of his Zurich restaurants.
A story like Grimm’s fairy tale
Let’s start at the very beginning, when Tobias Bischoff and Luca Orlando, then a banker and lawyer, decided over three years ago that Switzerland was ready for a new sushi concept. Because: at lunchtime you can get pizza, burgers and kebabs for little money, but sushi? The idea was born. The two career changers brought product developer Claire on board to help them come up with the best sushi recipe. The Swedish company Iggesund also supplies the sustainable cardboard, which is folded into TINYFISH’s typical packaging together with a Swiss family business. The rest? In a way, it’s almost history, as TINYFISH is already keeping tummies happy at seven locations in Zurich and two in Zug.
Snacking with a clear conscience
Every day, the fresh rice rolls produced in Zurich-Altstetten are placed on the refrigerated shelves of the take-away outlets, where queues at lunchtime are longer than in front of the local clubs. The concept works, the rolls taste good, organic salmon and certified tuna ensure a clear conscience, the clearly laid out menu makes for a quick decision and the minimalist interior makes you feel like you’re visiting friends.
Simply delicious!
Full of anticipation, you look up at TINYFISH and discover everything on the menu from classic nigiri and inside-out rolls to ramen, veggie tartare and hot miso soup. These are joined by seasonal delicacies such as kimchi sushi or the current tantanmen-style roll with tofu and a cranberry and chili sauce.
